Avacado Cheesecake recipe, a New Twist on Tradional New York Style Cheesecake

This cheesecake recipe was a brainstorm idea of mine. It tastes very similar to a plain New York Style Cheesecake. The slices are a beautiful avacado green.

The ingedients you will need for this recipe are about two cups graham cracker crumbs and about a tablespoon of melted butter (to make a graham cracker crust), three pounds of cream cheese, four avacados, six eggs, one teaspoon of vanilla, one teaspoon of triple sec, one and a half cups of sugar, the juice of two limes, and a dash of salt.

Seal the outside of a springform pan with aluminum foil and assemble the graham cracker crust. In a large mixing bowl mix the cream cheese, avacados, eggs, vanilla, triple sec, sugar, lime juice and salt until the batter is completely lump free. Pour the batter into the sealed springform pan. Bake the cheesecake in an inch and a half of water at 350 degrees until a toothpick comes out clean (check after about an hour). Allow the cheesecake to cool before cutting and serving.

Notes: I think this is unnecessary, but if you want the batter to be a little more stable mix in a tablespoon of cake flour. I actually have had a lot of success beating my cheesecake batter in a food processor.

This recipe actually makes a rather gorgeous cheesecake, and avacados contain a large amount of "Good Cholestorol." I wouldn't go so far as to say this is a healthy or lowfat cheesecake recipe but perhaps it is a little better for you than it could be.

Interesting! I bet it is a pretty color. Next time you make it, take a few pictures and add them to your hub. Occasionally, I make cheesecake and will have to give this a try. Thanks!
